Prepare Baba Ghanoush according to recipe or use existing.
Wash cauliflower and divide into florets.
Heat oil in a deep fryer or pot to about 165° C and deep fry cauliflower florets until golden brown.
Heat olive oil in a pan and fry salmon in it for about 2 minutes on both sides. Then let it cool down.
Open pita, spread with baba ghanoush, top with fried cauliflower, shred salmon and spread on top. Sprinkle with chopped parsley and lemon juice and wrap the salmon wrap.
