For the sweet potatoes

For the mayonnaise

Zubereitung
Preparation sweet potatoes
Preheat oven to 190°C convection oven.
Wash sweet potatoes and cut into slices about 2 cm thick.
Mix sweet potato slices with oil and half of the za'atar .
Place seasoned sweet potatoes on a baking sheet lined with parchment paper and roast in a preheated oven for about 20 minutes.
Meanwhile, you can prepare the sumac mayonnaise.
Set oven to 210 °C degrees.
Press on the sweet potatoes with a glass or similar and bake in the oven for another 10 minutes until crispy.
Smashed sweet potatoes sprinkle with chili and serve with mayo
Zubereitung Mayonnaise
Bring all ingredients to room temperature.
Put the egg yolks, mustard and sumac in a bowl and whisk with a mixer.
Stir in the oil drop by drop or in a very thin stream while blending until a creamy mixture is formed.
Season mayonnaise with a little lemon juice and salt.
Alternatively, of course, you can buy mayonnaise and just mix it with sumac.
