Ingredients

For the sweet potatoes

  • 1500 g Sweet potatoes
  • 8 Tablespoon Olive oil
  • 2 teaspoon Za'atar
  • 1 teaspoon Chili
  • Salt, pepper

For the mayonnaise

  • 2 Egg yolk
  • 3 teaspoon Lemon juice
  • 1 tablespoon Mustard
  • 300 ml Rapeseed or sunflower oil
  • 2 teaspoon Sumac

Zubereitung

Preparation sweet potatoes

  • Preheat oven to 190°C convection oven.
  • Wash sweet potatoes and cut into slices about 2 cm thick.
  • Mix sweet potato slices with oil and half of the za'atar . 
  • Place seasoned sweet potatoes on a baking sheet lined with parchment paper and roast in a preheated oven for about 20 minutes.
  • Meanwhile, you can prepare the sumac mayonnaise.
  • Set oven to 210 °C degrees.
  • Press on the sweet potatoes with a glass or similar and bake in the oven for another 10 minutes until crispy.
  • Smashed sweet potatoes sprinkle with chili and serve with mayo

Zubereitung Mayonnaise

  • Bring all ingredients to room temperature.
  • Put the egg yolks, mustard and sumac in a bowl and whisk with a mixer.
  • Stir in the oil drop by drop or in a very thin stream while blending until a creamy mixture is formed.
  • Season mayonnaise with a little lemon juice and salt.
  • Alternatively, of course, you can buy mayonnaise and just mix it with sumac.
