Falafel burger

The falafel burger should definitely go into production. Because the vegetarian burger tastes like the flavors of the Levant. Fluffy brioche bun, crunchy vegetables, crispy falafel burger patty and creamy tahini sauce – wonderfully fresh and spicy. No one can resist.

The falafel burger patty

I didn’t stick to the original recipe for the patty for the falafel burger, but instead used the recipe for beet falafel. With its pink color and slightly sweet aroma, it makes an excellent vegan patty. The beet turns the falafel mixture slightly pink, making it look almost like minced meat and it is just as easy to shape into flat patties.

The beautifully shaped beet falafel patties are then fried in oil in the pan until crispy. For me, chickpea patties just have to be crispy, but of course this also makes them quite greasy.

If the food is too heavy for your stomach, you can also simply prepare the falafel burger patties in a hot air fryer or in the oven. They will also get crispy there.

Sometimes, when I’m really in the flow, I just make double the amount. I then put the remaining chickpea patties in the freezer, because you can freeze them without worrying. And then I always have some on hand to make delicious falafel burgers.

Make your own falafel burger in just a few steps

You probably have the basic ingredients for burgers in stock, don’t you? Then head to the supermarket where you can get all the ingredients for falafel burgers. When you’re standing in front of the bread shelf, don’t use the normal burger buns, but the extra fluffy and slightly sweet brioche buns.

So that you can get started as soon as you have bought everything, you should leave the dried chickpeas to soak overnight. This is because canned chickpeas will make the falafel mixture too mushy and won’t fry well.

Have you got everything you need and soaked the dried chickpeas in water? Then you’re ready to go:

  1. Prepare the falafel burger patties.
  2. Mix the tahini cream.
  3. Fry the falafel patties.
  4. Toast the burger buns and cut the vegetables.
  5. Assemble the falafel burger and enjoy.

Ingredients

For the falafel patties

  • 125 g dried chickpeas
  • ½ Garlic clove
  • 1 small onion
  • 5 g fresh coriander
  • 5 g flat-leaf parsley
  • 80 g Red beet
  • 1 Teaspoon Cumin, ground
  • ½ Teaspoon Coriander seeds, ground
  • ½ Teaspoon Baking powder (optional)
  • ¼ Teaspoon Salt
  • 40 ml Vegetable oil for frying

For the tahini cream

  • 30 g Tahini
  • 15 ml Lemon juice
  • 30 ml Water
  • Salt, pepper

For the falafel burger

  • 1 Tomato
  • 1 red onion
  • 4 leaves Iceberg lettuce
  • 4 Brioche buns

Zubereitung

Preparation of falafel patties

  • Leave the chickpeas to soak in water overnight. (At least 12 hours)
  • Peel the onion and garlic. Cut the onion into quarters.
  • Strain the chickpeas in a sieve.
  • Mix the chickpeas with the garlic, onion, coriander (fresh and ground), parsley, cumin and salt (optionally add baking powder) in a powerful blender to a homogeneous mixture that is finer than the regular falafel mixture.
  • Transfer the mixture to a bowl, press flat and place in the fridge for approx. 1 hour to infuse.
  • Divide the falafel mixture into four equal parts and shape into patties (approx. 98 g per patty)
  • Heat the oil in a frying pan and fry the patties on both sides for approx. 1 ½ – 2 minutes over a high heat.
  • Drain the falafel patties on kitchen paper.

Preparation of tahini cream

  • Mix the tahini with the lemon juice, water, salt and pepper in a bowl to form a liquid cream.

Preparation of falafel burger

  • Slice the burger buns and toast briefly in a pan without fat or over a toaster.
  • Cut the tomato into slices.
  • Peel the onion and cut into rings.
  • Spread ketchup on the bottom of the burger bun and then top with lettuce, tomato, falafel patty and red onion rings.
  • Spread the top of the burger bun with tahini cream, place the bun lid on the burger and serve.

How to make the falafel burger vegan

The falafel burger is already vegetarian and you can make it vegan in no time. How do you do that? It’s all down to the burger buns and you can either make them yourself with a vegan dough or buy them ready-made in the supermarket. There they are right next to the other burger buns.
