Lentil salad with apple is a simple dish that you can quickly make yourself. Whether for lunch or dinner, a barbecue or a picnic – this fruity lentil salad is easy to prepare and can be enjoyed on any occasion.

For me, a good salad is one that combines many different flavors and textures. And that’s why I particularly like this lentil salad with apple, because it’s not only particularly aromatic, but also quick to prepare.

The ingredients for the apple and lentil salad:

  • Plate lentils: firm to the bite, tart & creamy
  • Apple: sweet & sour
  • Red onion: spicy & crunchy-soft
  • Carrots: sweet & crunchy
  • Walnuts: tart & crunchy
  • Parsley: fresh & spicy

  • Apple cider vinegar: sweetness & acidity
  • Olive oil: flavor carrier of aromas
  • Salt & pepper: enhance the individual flavors

Which lentils are particularly suitable for lentil salads?

In addition to plate lentils, you can also use green lentils, mountain lentils or beluga lentils, as I do in my beluga lentil salad with feta cheese. These types of lentils do not break down as quickly when cooked as red lentils, for example. However, they are very suitable for lentil soup.

Preparation in 4 steps: Make your own lentil salad with apple

You only need 30 minutes to prepare the lentil and apple salad! That’s why the salad sometimes ends up in my bowl in the evening as an after-work dish. And depending on what’s left in the vegetable drawer of my fridge, I sometimes swap out or add a few salad ingredients.

My tip: I also like to experiment with spices, so I can recommend sumac, cumin or cinnamon as an extra pinch for an unusual touch.

But now to the simple salad preparation, which you can complete in 4 steps:

  1. Cook the lentils: Rinse the lentils and cook until al dente. Then rinse in cold water.
  2. Chop the vegetables: while the lentils are cooking, you can chop the vegetables or grate them with a grater.
  3. Mix the dressing: Apple cider vinegar, oil, salt and pepper are mixed together in a few seconds.
  4. Mix the salad: the last step is to mix the lentil salad with the apple and serve.

Ingredients

For the lentil salad

  • 250 g Plate lenses
  • 1 Apple
  • 1 Red onion or shallot
  • 250 g Carrots
  • 50 g Walnuts
  • 15 g Parsley

For the dressing

  • 4 Tablespoon Apple cider vinegar
  • 4 Tablespoon Olive oil
  • Salt, pepper

Zubereitung

  • For the salad, cook the lentils in a pan of water for approx. 15-20 minutes over a medium heat until al dente. Then rinse under cold water.
  • Wash and core the apple and cut into wedges.
  • Peel and finely dice the onion.
  • Peel the carrots and grate finely with a grater.
  • Roast the walnuts in a pan without fat until they start to smell.
  • Wash the parsley, shake dry and roughly chop.
  • For the dressing, mix the apple cider vinegar and olive oil together in a small bowl and season with salt and pepper.
  • Mix all the ingredients together and serve the lentil salad.
