Rice pudding with rose water

For me personally, rice pudding is a delicious dessert that I like to treat myself to after dinner, fresh and creamy. For a few friends of mine, rice pudding is more a main course, which is then gladly plastered with a good portion of cinnamon and sugar. This variant with rose water I know from my mother and tastes for me like childhood.

A classic times completely different!

As a child, I actually knew only the rice pudding with rose water from my mother. When I was then sometime after school at a classmate for lunch and homework (of course, video games were played instead of homework), there was rice pudding with cinnamon and sugar as the main course.

I was a bit irritated and wondered if I had just been given a huge portion of dessert. Just like Macaulay Culkin stuffed himself with an incredibly large portion of ice cream with marshmallows, etc. in “Kevin – Alone at Home”.

Okay, nice! The rice pudding then tasted quite different than I was used to – super tasty, but something familiar to me was missing there. Of course, it was a few drops of rose water that gave my mother’s rice pudding that certain Levante drive.

The recipe is really totally simple and made relatively quickly. Simply heat the milk with the sugar and stir until the sugar has dissolved and then pure with the rose water and the round grain rice! Then the rice just needs to cook at a lower heat. You must not forget to stir, so that the rice pudding does not clump.

Then it’s on to the topping!

A feast for friends of creative toppings

What I love about rice pudding is the toppings. You can simply give free rein to your creativity. Or you just look what is still in stock and must go. Leftover use deluxe, I just say! The classic toppings for rice pudding is of course cinnamon and sugar.

For me, however, two other great toppings have emerged as favorites: Rose petals with pistachios and walnut with raisins.

Of course, there are many more possible combinations! For example:

  • Powdered sugar with cardamom
  • Roasted hazelnuts and nougat cream
  • sweetened tahini
  • Caramelized sesame seeds
  • chopped almonds and tangerines
  • Date syrup

Recipe for rice pudding with rose water

Ingredients

For the rice pudding

  • 1 Liter Milk or vegetable drink
  • 40 g Sugar
  • 250 g Rice pudding
  • 1 tablespoon Rose water

For the topping

  • Pistachios & rose petals
  • Cinnamon & Sugar
  • Walnuts & Raisins

Zubereitung

  • Heat milk in a large pot and dissolve sugar in it.
  • Add rice pudding and bring to a boil for approx. 3 – 5 minutes while stirring.
  • Turn the heat down to the lowest setting, add the rose water and leave the rice pudding to infuse for approx. 30 minutes with the lid closed. In between, stir again and again so that the rice pudding does not become lumpy.
  • Pour rice pudding into glasses or bowls and garnish with toppings of choice.
