Börek from the hot air fryer – Crispy sigara börek with cheese

Börek from the hot air fryer is a great alternative if you don’t have an oven at home but fancy a cheesy, crispy snack. Because the sigara börek is the perfect finger food for the couch. It’s best enjoyed while still warm, as the delicately melting cheese will keep its stringy texture for a long time.

Street food at home: Börek from the hot air fryer

Sigara börek or börek stick is a popular street food from Turkey that is made from yufka dough. The filling is usually savory with potatoes, spinach or cheese.

However, the pastry is not only available in stick form, but also layered as a casserole like my Börek with minced meat, as a cake from a springform pan or rolled up as a large snail.

To make things a little quicker, this börek variant comes from the hot air fryer and is filled with a cheese mixture – true to the motto: quick & easy.

You need the following ingredients for the crispy and spicy snack:

  • Kasar (cheese) or mozzarella
  • Feta cheese
  • parsley
  • Salt & pepper
  • Yufka dough sheets (triangles)
  • Black cumin
  • Egg yolk

Kasar is a cheese that originates from Turkey and is very popular in the Levant. It is traditionally made from sheep’s milk or goat’s milk. However, it is now also made from cow’s milk. It has a mild flavor and is often used for gratinating dishes because it melts so well.

As the cheese is not available everywhere, you can also swap it for mozzarella or young Gouda.

Equipment

Ingredients

  • 200 g Kasar (cheese) or mozzarella
  • 180 g Feta
  • 15 g flat-leaf parsley
  • salt, pepper
  • 18 Yufka dough sheets (triangles) approx. 280 g
  • 1 Tablespoon Black cumin seeds
  • 1 Egg yolk

Zubereitung

  • Grate and crumble the cheese and mix in a bowl.
  • Wash and chop the parsley.
  • Add the chopped parsley to the cheese mixture and season with salt and pepper.
  • Cover the edges of the yufka pastry sheet with the cheese mixture, fold in the sides and roll up. Repeat the process until everything is used up
    Tip: Moisten the tip of the pastry sheet with a little water to make it stick together better.
  • Brush the börek sticks with egg yolk and sprinkle with black cumin seeds. Then bake at 190° C for approx. 15-20 minutes in the air fryer until crispy.

Fill, wrap, bake – make your own börek from the Airfryer in 3 steps

Preparing börek with cheese is super simple and doesn’t require much preparation. And if you have nimble fingers, it’s really quick too.

  1. Prepare the filling: Grate and crumble the cheese, chop the parsley and mix everything together. Season the filling well with salt and pepper.
  2. Wrap the börek: cover a sheet of yufka dough with the cheese mixture (on the wide side of the dough triangle) and then simply roll up.
  3. Bake the börek: brush the börek rolls with egg, sprinkle with black cumin and bake the börek in the air fryer until golden brown and crispy.

My 5 tips for perfect sigara börek from the hot air fryer

  1. Use yufka dough that is triangular. If you don’t have any to hand, simply cut the triangles out of the pastry sheet. Or you can make the yufka dough yourself.
  2. Cover the yufka dough as it dries out quickly.
  3. Place a small bowl of water next to it and moisten the edges before rolling it up so that it holds together better.
  4. Don’t put too many rolls in the air fryer, otherwise they won’t be crispy.
  5. Season the filling: spices such as cumin, sumac, paprika or chili go perfectly with the cheese and add that little bit extra.
