Oriental chickpea salad – these ingredients go into the bowl

The more colorful the salad, the more varied the nutrients – and your body will be happy about that. With chickpeas and feta, this salad is very high in protein and keeps you full for a long time. The Turkish chickpea salad is also very easy to prepare, so you can take it to work as a meal prep. However, you should keep the dressing separate for this.

So what goes into the salad bowl? Only the best and freshest ingredients, of course! You need the following ingredients for this oriental salad with chickpeas:

  • Chickpeas: best precooked from the jar. This saves you a lot of time. However, if you want to cook them fresh, you can find out how here.
  • Vegetables and fruit: onions, pointed peppers, cherry tomatoes and pomegranate seeds provide different flavors that harmonize well.
  • Herbs: Parsley, mint and coriander are the classic herbs of oriental cuisine and are also used here in the salad.
  • Spices: Cumin, paprika, pepper and salt add plenty of spice to the Arabic chickpea salad.
  • Cheese: add a good chunk of feta to the salad for a subtle flavor. You can also leave it out or replace it with a plant-based alternative if you follow a vegan diet.

Chickpea salad dressing

The dressing for the oriental chickpea salad can be mixed together quickly. All you need is olive oil, fresh lemon juice and the spices mentioned above.

If you don’t want to serve the oriental salad with chickpeas straight away, don’t pour the dressing over the salad yet. You can chop everything up and put it in the bowl, but you should only mix the salad with the dressing when you want to eat it – otherwise it will be soggy.

Recipe for oriental chickpea salad

Ingredients

  • 450 g cooked chickpeas
  • 1 red onion
  • 1 red pointed peppers
  • 250 g Cherry tomatoes
  • 40 g Parsley
  • 25 g Mint
  • 15 g Cilantro
  • 30 ml fresh lemon juice
  • 150 g Feta cheese
  • 100 g Pomegranate seeds
  • 4 Tablespoon Olive oil
  • ½ Teaspoon Cumin
  • ½ Teaspoon Sweet paprika powder
  • Salt, pepper

Zubereitung

  • Strain the chickpeas, rinse briefly and drain.
  • Peel and dice the onion.
  • Remove the stalk from the peppers, remove the seeds and cut the peppers into cubes.
  • Halve or quarter the cherry tomatoes.
  • Wash the parsley, mint and coriander, spin dry, pluck from the stalks and roughly chop.
  • Squeeze the lemon. Crumble the feta.
  • Mix all the ingredients for the salad and season with salt and pepper.

How long does the Turkish chickpea salad keep?

The finished salad will keep for approx. 3 days in the fridge. If possible, keep the salad and dressing in separate containers so that it stays fresher and the herbs don’t get soggy.
