Aish el Saraya – Arabic dessert

Aish el Saraya: What is that?
If you already like tiramisu, you’ll love Aish el Saraya! It’s basically a simple layered dessert made from toast, sugar syrup and custard. The bottom layer consists of toast soaked in a little sugar s yrup. You could also call it a layered bread pudding.
The top layer consists of a creamy milk pudding with the aroma of rose water and orange blossom water. This pudding, which is also called ashta, is a real all-rounder. It is used in various classic Arabic desserts, such as the filled pancakes Atayef or Snud il Sit.
This dessert, which is sometimes mistakenly referred to as Arabic cake or Arabic tiramisu, is garnished with chopped pistachios. I also sprinkled a few dried rose petals on top, but this is really only optional and tastes great without!
The Aish el Saraya recipe is very simple!
What I love about Aish el Saraya: It doesn’t need many ingredients and it’s made in no time at all. You don’t even have to bake it, just chill it. This means you can prepare it perfectly and serve it straight away if required.
To make Aish el Saraya, all you need is a few slices of normal toast, sugar, milk, cream, rose water, orange blossom water (you can order this online) and chopped pistachios to garnish.
The best thing is that it’s really super easy to prepare!
- Make sugar syrup: Simply bring water and sugar to the boil and flavor with rose and orange blossom water.
- Cook milk pudding: The pudding is made in no time at all and is not that sweet either. Simply mix all the ingredients together and bring to the boil briefly.
- Layer the dessert: When layering, soak the slices of toast with the sugar syrup and then spread the pudding on top.
- Chill: To set the pudding, place the dessert in the fridge for a few hours. You can then garnish it with chopped pistachios before serving.

Recipe for Aish el Saraya
Equipment
- Casserole dish (25 x 20 cm)
Ingredients
For the sugar syrup
- 100 g Sugar
- 100 g Water
- 1 Teaspoon Rose water
- 1 Teaspoon Orange blossom water
For the pudding
- 300 ml Whole milk
- 300 ml Whipped cream
- 60 g Cornstarch
- 1 Packet Vanilla sugar
- 2 Teaspoon Rose water
- 2 Teaspoon Orange blossom water
For the dessert
- 6 Slices Toast bread (wheat)
- 50 g chopped pistachios
- 10 g Dried rose petals
Zubereitung
Preparation of syrup
- Dissolve the sugar and water in a pan and then simmer until it becomes a syrup (approx. 8 – 10 minutes).
- Remove the pan with the syrup from the heat and leave to cool briefly.
- Stir in the rose and orange blossom water and leave to cool.
Preparation of pudding
- Mix the cold milk, cream, cornflour, vanilla (sugar) and sugar together and dissolve.
- Heat the milk mixture, stirring constantly (do not boil), until it becomes a creamy mass.
- Remove the milk pudding from the heat and leave to cool briefly.
- Stir in the rose and orange blossom water.
Dessert preparation
- Cut off the edges of the toast and toast in a toaster or oven until crispy.
- Place the toast on the bottom of the baking dish and pour over the sugar syrup.
- Spread the milk pudding on top.
- Cover the tin with cling film and leave to set in the fridge for approx. 4 hours.
- Sprinkle the dessert with chopped pistachios and dried rose petals and serve.
