Börek with minced meat – Incredibly delicious!
I ate börek with minced meat for the first time at a friend’s house and was immediately blown away. Until then, I had only known börek wrapped up as a snail or as a crispy stick. So I was very curious about this börek from the oven. My Börek with minced meat original is really very simple, you can also prepare it and eat it later.
What is Börek?
Börek is a Turkish dish made with yufka dough. However, it is also known and popular in the Balkans, Greece and Arab countries. The börek recipes differ depending on the region and the name can also vary, e.g. burek or bureki.
Börek is available as casseroles, rolls, pockets or snails, as the yufka dough is very elastic and easy to shape. The dough is usually filled with a savory filling – for example with cheese, spinach, potatoes or, as in this case, börek with minced meat filling.

To make this delicious börek casserole, you need fresh yufka dough. You can also make the yufka dough yourself, in which case the dough is more elastic. Of course, you can also use ready-made dough and I have honestly used it in this recipe – it is simply quicker.
Since I got to know this börek variation from my friends, I tried to make the börek Turkish with minced meat. That’s why this börek recipe also has a creamy sauce.
You need the following ingredients for the Börek with minced meat original Bistro Badia recipe:
- For the sauce: butter, yogurt (10% fat) and whole milk
- Other animal products: Eggs and minced beef
- Vegan products: Yufka dough and olive oil
- Vegetables: onion, garlic and beefsteak tomato
- Spices: Paprika powder, cumin, salt, pepper and black cumin seeds
It is important that you use yufka dough and not filo pastry. The latter is more suitable for desserts. You can get the dough in any well-stocked supermarket.

Make your own spicy börek with minced meat in the oven
This dish reminds me a bit of lasagna. It has a minced meat sauce, a creamy white sauce and is layered with pastry. The structure of the dishes is similar, but the preparation and ingredients are not.
You can divide the börek with Turkish-style minced meat into 3 rough steps:
- Preparation of the creamy white sauce: Melt the butter and mix with the milk, yogurt and eggs. Season to taste with salt and pepper.
- The mince filling: Cut the onions, garlic and tomatoes into small cubes. Brown the mince and onions. Add the garlic, diced tomatoes and spices and simmer until the water has evaporated.
- Make the original layers of börek with minced meat: Line the oven dish with yufka dough, drizzle with sauce, sprinkle with minced meat filling and cover with yufka dough. Repeat this process until there is no more left. Then brush with egg and bake the börek with minced meat in the oven until crispy or golden brown.

Equipment
- Casserole dish (25 x 20 cm)
Ingredients
For the sauce
- 50 g Butter
- 100 g Yogurt (10% fat)
- 100 ml Whole milk
- 1 Egg (M)
- Salt, Pepper
For the börek
- 1 Onion
- 1 Garlic clove
- 1 Meat tomato
- 1 Tablespoon Olive oil
- 500 g Minced beef
- 2 Teaspoon Sweet paprika powder
- 2 Teaspoon Cumin
- 6 Yufka dough sheets approx. 150 g
- 1 Egg yolk (M)
- 1 Tablespoon Black cumin seeds
Zubereitung
Preparation of sauce
- Melt the butter, remove the pan from the heat and mix with the milk and yogurt.
- Stir in the egg and season with salt and pepper to taste.You can also stir in the egg white (from the egg yolk) so that you don't have any leftovers.
Preparation Börek
- Preheat the oven to 180° C top and bottom heat.
- Peel and finely chop the onion and garlic.
- Wash the tomato, remove the stalk and cut into pieces.
- Heat the oil in a pan and sauté the onion for approx. 2 minutes.
- Add the minced meat and fry for approx. 3 minutes until crumbly.
- Add the garlic, tomato pieces and spices and simmer over a medium heat for 5 minutes.
- Place a sheet of pastry in the tin, drizzle with a little sauce, spread a little minced meat sauce on top and place another sheet of pastry on top. Repeat the process until everything is used up.
- Brush the last pastry sheet with egg yolk and sprinkle with black cumin seeds.
- Bake the börek with minced meat for approx. 30-35 minutes until crispy.

How long can Börek with minced meat keep?
Börek with minced meat tastes best when it comes straight from the oven to the table. However, sometimes you’re not that hungry and there’s a bit left over. You can store the leftovers in an airtight container in the fridge for approx. 2-3 days.
Can you also freeze börek?
As I said, it tastes best warm and fresh. However, you can also freeze börek with minced meat in a suitable container for approx. 3 months.
Then slowly defrost it in the fridge and reheat it in a pan, in the oven, in the microwave or in the airfryer – but not too hot, otherwise it will burn on the outside and still be cold on the inside.
