Freezing tzatziki: it’s so easy

In short: yes, you can freeze tzatziki – there’s just one small catch. Freezing may change the consistency of the tzatziki and the ingredients may separate. This is because yogurt and cucumber contain a lot of water, which separates from the fat when frozen. This is why your tzatziki may be a little runnier after defrosting. But this is easy to fix. To freeze tzatziki, follow my simple steps:

  1. Pack well: Fill the tzatziki into a freezer bag or an airtight container. It is best to label it so that you know when you have frozen the portion.
  2. Freeze in small portions: This way you only defrost as much as you need and avoid having to throw anything away at the end.

How to defrost tzatziki properly

It is best to leave the frozen tzatziki to defrost slowly in the fridge. If it has separated a little, stir it well again before eating.
