Make your own pistachio cream

Making your own pistachio cream is really easy and only requires a few ingredients. You can enjoy the cream perfectly as a spread on bread, conjure up delicious desserts or make the famous Dubai chocolate.

Is pistachio cream the same as pistachio purée?

Pistachio cream is actually not the same as pistachio puree. The puree consists of 100% pistachios and is therefore a raw product, while the cream is a composition of several ingredients. The pistachio cream is perfect for Dubai Chocolate.

You only need 6 ingredients for pistachio cream:

  • Pistachios: The basic ingredient – make sure they are of good quality!
  • White chocolate: Adds a chocolaty note to the cream.
  • Butter: Fat is a flavor carrier and butter also provides a creaminess.
  • Whole milk: For a full-bodied taste and better spreadability.
  • Powdered sugar: For the sweetness – you can decide for yourself how sweet you like it.
  • Salt: Just a pinch to enhance the flavor.

Make your own pistachio cream: The perfect cream in 4 steps

  1. Blanch and shell the pistachios: The pistachios are briefly boiled so that you can remove the shell. You can of course also buy blanched pistachios, but these are much more expensive.
  2. Melt the chocolate: Melt the white chocolate and mix with the other ingredients (butter, milk, powdered sugar and a pinch of salt).
  3. Grind the pistachios: The pistachios must be ground until the oil comes out and they turn into pistachio puree.
  4. Mix the ingredients: Finally, simply mix all the ingredients together and you have made your very own pistachio cream.

Equipment

Ingredients

  • 160 g unpeeled pistachios
  • 100 g white chocolate
  • 150 ml whole milk
  • 40 g butter
  • 4 Teaspoon icing Sugar
  • 1 Pinch salt

Zubereitung

  • Heat the water in a pan and blanch the pistachios for approx. 5 minutes over a medium heat.
  • Drain the water and briefly rinse the blanched pistachios under cold water.
  • Place the blanched pistachios on a tea towel and rub them back and forth with your hands to loosen the shells.
  • Remove the remaining shells from the pistachios and place in a food processor.
  • Heat the white chocolate, milk, butter, powdered sugar and salt over a bain-marie.
  • Stir the ingredients until everything has melted. Leave the chocolate mixture to cool slightly.
  • Grind the pistachios in the food processor until the oil comes out of the kernels and they have turned into a paste.
  • Gradually add the chocolate mixture to the pistachio puree until a fine cream has formed.
  • Fill the pistachio cream into sterile jars and seal airtight. It will keep for approx. 2 weeks in the fridge.

Pistachio cream – How long does it keep?

It is best to transfer the finished pistachio cream into sterile jars and store them in a cool, dry place. Freshly made pistachio cream can be kept in the fridge for approx. 3 – 4 weeks.
