Menemen – Turkish scrambled eggs

Recipe for menemen – Turkish scrambled eggs
Ingredients
- 4 panicle tomatoes
- 2 green pointed peppers
- 1 small onion
- 2 tablespoon olive oil
- 1 teaspoon sweet paprika powder
- 1/2 teaspoon chili flakes
- salt, pepper
- 4 eggs (M)
- 5 g fresh parsley
Zubereitung
- Wash the tomatoes and peppers. Cut the tomatoes into cubes. Remove the seeds from the peppers and dice them too.
- Peel and finely chop the onion.
- Heat a pan, add the olive oil and sauté the onion for 2 minutes over a medium heat.
- Add the diced tomatoes and peppers, season with paprika powder, chili, salt and pepper and simmer for approx. 15 minutes over a medium heat with the lid on.
- Wash the parsley, shake dry and roughly chop.
- Add the eggs to the tomato sauce and stir until the egg starts to set.
- Garnish the menemen with chopped parsley and serve with sesame bread or flatbread.

You don’t need a lot of ingredients to make these simple scrambled eggs with tomatoes and peppers , nor do you have to spend a long time in the kitchen.
- If you want to use really tasty eggs for the dish, go for organic eggs. They usually also have a beautifully bright yolk.
- Tomatoes taste most aromatic during their season (July to September). For this reason, it can really taste better in summer than in winter.
- I have not only used salt and pepper for seasoning, but also sweet paprika powder and chili flakes. Instead of chili flakes, you can of course also use Pul Biber (slightly hot bell pepper flakes). However, not everyone has this at home and chili works just as well.
- You can also season the dish with other spices such as cumin, smoked paprika powder or turmeric for a more intense color.
- You can also replace the pointed peppers with colorful peppers and the vine tomatoes with any other variety you like. However, pay attention to the quantities, otherwise the recipe will have to be adjusted.
A few tips for tasty menus
You don’t need any great cooking skills to prepare Turkish scrambled eggs with tomatoes. All you have to do is buy everything, chop it up and put it in the pan.
Nevertheless, I have one or two tips for you on how to make the Turkish egg dish even tastier:
- Leave the scrambled eggs to simmer with the lid on.
- Add the eggs to the pan and stir them into the tomato sauce first.
- Garnish the meal with fresh herbs.
- For more flavor, you can fry the Turkish scrambled eggs in awarma. There are also menemen recipes with sucuk or feta.
