Halloumi with fried egg and tomato

Sweet or savoury – when it comes to breakfast, opinions often differ. Personally, I love a really hearty breakfast. But it doesn’t always have to be something with meat. So if it’s not a shakshuka or the perversely delicious bean puree, I like to fry up a piece of halloumi with a fried egg and a few slices of tomato.

I have to confess that during the week I often skip breakfast and then prefer to start directly with lunch. I did this even before intermittent fasting became so popular. I just listen to my gut feeling: no hunger, no food – done. On weekends, however, I celebrate it all the more.

But that doesn’t mean I can’t be tempted to eat breakfast. Because I suffer from acute gluttony. It’s a terrible thing, so don’t ask. But what always works is halloumi. And even as a belated breakfast lunch.

Halloumi is so unproblematic and quick to prepare that even my two younger brothers couldn’t mess it up – I think… Although, bad example. They actually mess up everything that has to do with food. Sorry bros, that’s the way it is! But there’s nothing easier than frying this incredibly delicious squeaky grilled cheese in the pan.

Then add the fried egg, a few tomato slices, a pinch of za’atar and the perfect vegetarian breakfast is ready.

Ingredients

Zubereitung

  • If the piece of halloumi is too thick, cut it in half. The piece should not be thicker than 2 cm.
  • Slice the tomato.
  • Heat the olive oil in a pan and fry the halloumi and tomato slices on both sides for about 2 minutes.
  • Add the egg to the pan and fry on a slightly lower heat for a few minutes until the desired doneness.
  • Season the egg and tomato with salt and pepper.
  • Arrange everything on a plate and sprinkle with za'atar.
