Gilthead bream, also known as sea bream, is a sea fish that is very popular due to its firm, white flesh and mild flavor.
I recommend getting the fish fresh from the market or from a fishmonger. You can also get it ready to cook there if it’s not already. And at the market you will also find stalls with fresh vegetables, which you can also add directly to your shopping basket.
You will need the following ingredients for the gilthead bream from the oven:
- Gilthead bream: fresh & ready to cook
- Vegetables: potatoes, zucchinis, tomatoes, fennel, lemon and garlic
- Herbs: thyme, rosemary & parsley
- Spices & oil: simply good olive oil and salt & pepper

Because gilthead bream is a mild edible fish, it is very popular and is prepared in a variety of ways. In this recipe, I explain how to cook sea bream in the oven. The fish becomes particularly aromatic with lots of fresh herbs and a Mediterranean aroma develops when cooked in the oven.
You don’t need a lot of cooking experience to prepare the fish, it’s really quite simple.

- Mix the marinade for the sea bream.
- Wash the gilthead bream, rub with the marinade and stuff with herbs and lemon.

If the gilthead bream is not bought ready to cook, you can make it yourself in 4 steps at
- Remove scales: Run the back of a knife (or a special fish scaler) over the skin against the direction of the scales. It is best to do this over the sink, otherwise the fish scales will fly all over the place.
- Gutting: Cut open the belly with a sharp knife (from anus to gills), remove the innards and rinse thoroughly under cold water.
- Remove the gills: Remove with kitchen scissors or a knife. Not essential, but improves the taste. You can also cut off the whole head.
- Dab dry: Dab the inside and outside with kitchen paper and continue according to the recipe.
Dips and sauces that go well with crispy gilthead bream

Recipe for sea bream from the oven

Ingredients
For the gilthead bream
- 2 Gilthead bream, küchenfertig
- 1 untreated lemon
- 6 Branches Thyme
- 2 Branches Rosemary
- 4 Stalks Parsley
- 2 Garlic cloves
- 4 Tablespoon Olive oil
- Salt, pepper
For the oven vegetables
- 500 g Potatoes (mainly waxy)
- 1 Branch Thyme
- 2 Branches Rosemary
- 1 Zucchini
- 2 Tomatoes
- 1 Fennel
- 2 Tablespoon Olive oil
- Salt, pepper
Zubereitung
Preparation of gilthead bream
- Preheat the oven to 190° C top and bottom heat.
- Wash the gilthead bream and check whether there are any scales left on the fish. If there are still scales, carefully scrape them off with a knife. Then pat dry.
- Cut the lemon in half. Squeeze one half and cut the other half into thin slices.
- Wash the herbs and shake dry.
- Peel and finely crush or grate the garlic.
- Mix the olive oil with 2 tablespoons of lemon juice, garlic, salt and pepper to make a marinade.
- Cut into the sides of the gilthead bream with a knife and rub the marinade all around and inside.
- Stuff the lemon slices and herbs into the gilthead bream.
- Place the gilthead bream in an oven dish or baking tray.
Preparation of oven vegetables
- Peel the potatoes.
- Roughly chop the thyme and rosemary.
- Cut the vegetables into bite-sized pieces as desired and mix with olive oil, herbs, salt and pepper.
- Add the vegetables to the gilthead bream – spread them around the bream, not on top of it.
Preparation in the oven
- Place the gilthead bream with the vegetables in the oven and bake for approx. 35 minutes.
- Serve the gilthead bream from the oven with oven vegetables.
