Layali Lubnan: A divine semolina dessert
The nicest compliment is always the wide eyes of the guests when you serve them the dessert. And the beauty of this semolina dessert with cream topping, pistachios and rose petals is not only its appearance, but also its name: “Layali Lubnan” – “Lebanese Nights”.
Imagine that:
It’s 28 °C, you’re sitting on the balcony in the evening and enjoying the cool breeze after a really hot day. You took all the time in the world for dinner. We had hummus, fresh pita bread, aubergine cream, taboulé and freshly grilled chicken skewers. Pickled vegetables and delicious olives here and there. And afterwards?
Then take a small spoon and dip it into layers of sweet orange blossom sugar syrup, creamy mascarpone with rose water and aromatic semolina pudding with cardamom – all topped with crunchy pistachios.
A smile caresses your mouth and you think: “These are Lebanese nights”.
Recipe for Layali Lubnan
Ingredients
For the sugar syrup
- 60 g Sugar
- 50 ml Water
- 1/2 TSP Orange blossom water
- 1/2 TSP Lemon juice
For the semolina pudding
For the cream
- 120 g Mascarpone
- 50 ml Cream
- 1 TSP Sugar
- 1 TSP Rose water
For garnishing
- 25 g Pistachios chopped
Zubereitung
Syrup
- Put all the ingredients in a small saucepan and bring to the boil.
- Simmer on medium heat for approx. 5 – 10 minutes and set aside to cool.
Semolina pudding
- Heat the milk, sugar, cardamom and mahleb in a small saucepan over medium heat.
- Then add the semolina while stirring and heat for approx. 3 – 5 minutes until the pudding throws small bubbles.
- Divide the pudding between the dessert bowls and chill for approx. 15 minutes.
Cream
- Mix all the ingredients together to make a velvety cream.
Layer and garnish the dessert
- Spread the cream over the cooled semolina pudding.
- Garnish with pistachios.
- Drizzle with syrup.
