Air Fryer Eggplant

If you want something quick and easy, then make eggplant in the air fryer! Whether sliced or diced, you can have roasted vegetables as a side dish or topping in just a few minutes. Preparing eggplant in the airfryer is particularly worthwhile if you only want to make small portions.

Quick vegetables – Roasted eggplant from the Air Fryer

In Levantine cuisine, vegetables are often deep-fried and then used in a stew, wrap or casserole. This is of course a greasy affair, but you can also use a hot air fryer for this. This makes your dish less greasy and reduces the number of calories considerably.

Even though I always use good olive oil for my recipes, it is of course good to cook something a little lighter from time to time. And eggplant from the hot air fryer is not only healthier, but also really quick to prepare.

To prepare the eggplant in the air fryer, all you need is a tasty eggplant, a few drops of olive oil and a pinch of salt. You then just have to decide whether you want to cut the eggplant into slices or cubes.

Equipment

Ingredients

  • 1 Eggplant (ca. 270 g)
  • 1 Teaspoon Salt
  • 1 Tablespoon Olive oil

Zubereitung

  • Cut the eggplant into chunks, slices or cubes. I cut them into slices.
  • Salt the eggplant slices and leave to rest for 5 minutes.
  • Use kitchen paper to dab the water from the eggplant slices and then brush both sides of the slices with oil.
  • Cook the eggplant in the air fryer at 200 °C for 10 minutes. Turn the eggplant slices halfway through.
