Arugula salad with grated halloumi

We love quick and easy recipes! And this arugula salad with grated halloumi is one of the most fantastic after-work recipes. No matter if it’s summer or not, you can always eat a fresh salad and a piece of cheese goes great with it, too. Usually you only know halloumi grilled or fried, right? Then it is now time to process the squeaky cheese in a different way: grated.

Cumin lemons – the highlight

Arugula salad is usually enriched with tomatoes and mozzarella or feta. Some also mix it with pesto and pasta, but the least probably with cumin lemons! Salt lemons you know for sure, but cumin lemons you have not tried yet, right? Super simple and super delicious. You cut the lemons into fine slices and dust them with cumin and salt. Then you let them steep for a while. Juice comes out, which you can use later for the dressing.

Rafik once told me that when he was a child, his mother gave him a slice of lemon sprinkled with cumin when he was hungry for a snack. With me it was only an apple or a dry roll… Quite excitedly he cut me a few months ago a lemon on and sprinkled it with cumin. I was confused. This is what I was supposed to eat now? Skeptically, I shoved the lemon slice into my mouth. Fierce. Crass. Those were my first thoughts… and yes, what can I say? Absolutely delicious!

And so it was somehow clear that they will one day find their way into a salad. Because the tangy lemon slices harmonize perfectly with the tart rocket, the mild halloumi and the crunchy sumac onions….

Recipe for arugula salad with grated halloumi

Ingredients

For the arugula salad

  • 1 Onion
  • 2 teaspoon Sumac
  • 1/2 Organic lemon
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/2 Cucumber
  • 125 g Halloumi
  • 125 g Arugula

For the dressing

  • 1 tablespoon Lemon juice
  • 4 tablespoon Olive oil
  • Salt, pepper

Zubereitung

  • Peel onions, halve and cut into fine half-moons. Mix with sumac and set aside.
  • Wash lemon, cut in half lengthwise and cut into thin half slices. Sprinkle with cumin and salt, mix and set aside. Lemon juice comes out, which is also needed.
  • Wash the cucumber, cut in half lengthwise and cut into half-moons.
  • Halloumi rub.
  • Wash the arugula and spin dry.
  • Mix all ingredients in a large bowl or arrange on a large plate. 
  • You can mix the lemon juice with salt and cumin into the dressing.
  • Mix the lemon juice with the olive oil and the leaked lemon juice. Season with salt and pepper and pour over the salad.
  • Mix the arugula salad and serve.
