Halloumi Fries
Halloumi Fries or Halloumi Sticks, call them what you like, but please try them! I am a fries lover and have tried all the variations and the cheese fries have won me over – crispy and spicy.
French fries are a big thing in the Levante. I think there’s rarely a table set without home-made chips, at least in my family. That’s totally crazy! Even with my family in Lebanon it’s like that. Different preparation methods for halloumi fries
Fried or grilled halloumi alone makes me jump for joy, but in a crispy breading as chips? That’s too much, that’s too tasty! Sharing is out of the question – and I say that as a person who really likes to share everything.
Well, I’m not quite that serious, because of course I want to share the pleasure. And a portion of the halloumi sticks is also quite filling. So it’s okay if someone helps me crunch the finger food.
You can easily make halloumi fries yourself. Of course, you need halloumi, eggs, flour, spices and breadcrumbs for the breading and plenty of fat for frying.
If you don’t want to deep-fry the cheese sticks, you can also prepare them in the airfryer or oven. You can find out how to prepare the halloumi fries in the airfryer here. You may need to extend the baking time by a minute or two. This also applies to preparing the halloumi sticks in the oven.
Crispy, crunchy, halloumi sticks!
Incidentally, the breading is very simple to make and contains a little flavor surprise: za’atar! I simply mix this fantastic spice mixture of thyme, sesame, sumac and salt with the flour and give the halloumi fries a perfect first coating.
I then dip the frits in whisked egg and then immediately turn them in fine breadcrumbs. I then deep-fry the halloumi and after about 30 minutes the crispy cheese fries are already on the plate and half eaten.

Recipe for halloumi fries
Ingredients
- 250 g Halloumi
- 150 g Breadcrumbs
- 100 g Flour
- 2 Eggs
- 2 EL Za'atar
- Oil for frying
- Amba Sauce For dipping
Zubereitung
- Halve the halloumi lengthwise and then cut into thin sticks.
- Crack the eggs and whisk them in a bowl.
- Mix the flour with the za'atar.
- Put the flour mixture and breadcrumbs in one plate each.
- Build breading line: 1. flour, 2. eggs, 3. breadcrumbs
- Turn the halloumi sticks first in the flour za'atar, then in the egg and then in the breadcrumbs. Place the sticks on a plate.
- Heat plenty of oil in a pan, pot or deep fryer and fry the halloumi fritters until golden brown.
- Serve hot halloumi fries with e.g. amba sauce.

And what’s for dipping?
Do you need a dip? Mayo, ketchup, BBQ sauce or just plain – just serve whatever you like with chips. I always serve amba with my halloumi fries. It’s a spicy sauce made from mango that goes really well with it. It’s slightly spicy and nice and fruity.
