Couscous salad with strawberries and green asparagus
Iam a spring child, born in April and as an Aries sometimes “a bit” stubborn. But what always gets me soft is a delicious couscous salad. Just when my blood sugar level is in the basement and I’m devastating whole swathes of land with destructive lasers from my eyes. At least that’s how the head cinema goes 😀
This couscous salad with fresh strawberries and green asparagus not only soothes me, but always puts me in a state of absolute bliss.
For me, spring is like a deep breath and an awakening of the senses. The sun beams in your face, nasty geese chase you hissing through the park and everywhere you smell fresh flowers. It’s like the colour explosion after watching a black and white film and then having the HD TV in front of your nose again: Overwhelming! What could be better than a fresh, aromatic couscous salad that not only tastes like spring, but also looks like spring?
This salad is super easy and quick to make. The couscous cooks on its own while you chop the fresh strawberries and green asparagus. Add a few roasted almonds and then the fresh dressing with lemon zest, za’atar and sumac and your spring greeting from the kitchen is ready. It always brings me back home very quickly from the gloomy end-time head cinema with the laser eyes.
Recipe for couscous salad with strawberries and green asparagus
Ingredients
Zubereitung
- Prepare the couscous according to the package instructions.
- Slice the strawberries.
- Break off the lower ends of the asparagus and cut into bite-sized pieces.
- Cut the spring onions into rings.
- Wash the lemon properly and finely grate the zest. Squeeze half a lemon.
- Briefly toast the almonds in a non-stick pan and set aside.
- Mix together the couscous, strawberries, spring onion, asparagus and lemon zest.
- Mix the lemon juice with the olive oil, za'atar, sumac, salt and pepper and marinate the salad with it.
- Garnish the couscous salad with almonds and serve.
