Bulgur with minced meat is a delicious and simple dish that you can prepare quickly. With just a few ingredients, you can make this fantastic and hearty bulgur and mince pan for lunch or dinner.
Bulgur with minced meat – few ingredients, lots of flavor
You don’t necessarily need many or special ingredients to conjure up a delicious meal. Sometimes you can create a warming comfort food with just a few basics and it’s a dish that the whole family will love.
You probably already have most of the ingredients in your kitchen cupboard. Then all you need are a few fresh ingredients, which you can get at any supermarket:
- Bulgur: I used medium coarse, but coarser is also fine.
- Vegetables: Onions, garlic and tomatoes add umami to the pan.
- Minced beef: can be replaced by other meat or a plant-based alternative.
- Spices: Tomato paste, paprika powder, cumin, cinnamon and salt give the dish a Levantine touch.
- Topping: Yogurt and parsley are only optional.
Do you see? There really aren’t many ingredients and you can of course change the topping. Toasted pine nuts or some grated Parmesan cheese also go very well with the bulgur recipe with minced meat.
Preparing bulgur with minced meat – a one-pot dish
This bulgur recipe is a great meal prep dish that you can even freeze in portions. And if you’re not a meat lover, you can easily replace the minced beef with a plant-based alternative.
You already know which ingredients you need for the bulgur with minced meat. Now I’ll briefly explain how to prepare it. You can find the exact step-by-step instructions in the recipe card:
- Chop the vegetables and fry with the minced meat.
- Add the spices and bulgur and fry briefly.
- Add water to the bulgur pan and simmer.
- Serve the bulgur with minced meat with yogurt and parsley.

Recipe for bulgur with minced meat

Ingredients
For the bulgur
- 1 Onion
- 1 Garlic clove
- 2 Tomatoes
- 3 Tablespoon Olive oil
- 300 g Ground beef
- 3 Tablespoon Tomato paste
- ½ Teaspoon Paprika powder
- ½ Teaspoon Cumin
- ½ Teaspoon Cinnamon
- 150 g Bulgur (medium coarse)
- 300 ml Water
- Salt
To garnish
- 4 Tablespoon Joghurt
- 1 Handful Petersilie
Zubereitung
- Peel and finely dice the onion and garlic.
- Wash and dice the tomatoes.
- Heat a pan, add the olive oil and fry the diced onion for approx. 3 minutes until translucent.
- Add the minced meat and brown all over.
- Add the garlic, tomato purée and spices and fry briefly.
- Fold in the bulgur and diced tomatoes, add water and season with salt.
- Place a lid on the pan and leave to infuse over a low heat for approx. 15 minutes. Stir occasionally.
- Garnish the bulgur mince pan with yogurt and parsley and serve.

How long can the bulgur mince dish be kept for?
If you leave the rest of the bulgur pan to cool and put it in a freshness box, it will keep for about 3 days in the fridge.
Can the bulgur with minced meat also be frozen?
Yes, you can also freeze the bulgur dish. It should be packed in an airtight container (freezer bag or freezer box), but without the topping. It will then keep for approx. 3 months in the freezer. You can then put it in the fridge to defrost slowly.
