Air Fryer rosemary potatoes
Air Fryer rosemary potatoes are a classic side dish that you can prepare quickly and easily. Aromatic and crispy – that’s how I love potatoes. But I also eat the tubers as mash, soup or salad.
It doesn’t always have to be a whole tray of rosemary potatoes straight from the oven, if you only want to make a small portion, then use your air fryer. It doesn’t need to be preheated and you even save money.
Ingredients for crispy rosemary potatoes
Want a recipe with few ingredients? Here it comes! You only need four ingredients to prepare the rosemary potatoes and you are guaranteed to have two of them in the house. You can find the others in the supermarket next door.
However, I recommend that you always use organic products, especially if you want to eat the skin of the potatoes. Conventional cultivation often uses toxins that settle in the products.
You will need the following ingredients for this recipe (you will find the exact quantities at the bottom of the recipe card):
- Potatoes (mainly waxy)
- Olive oil
- Rosemary or rosemary sprigs
- Salt
Which potatoes are the best for roasting?
There are so many different types of potatoes. How do you know which ones are particularly suitable for the air fryer? I’ll give you a little digression …
There are three types of potato: floury, waxy and waxy-boiled. Firm-boiling potatoes are best for crispy rosemary potatoes because they have a low starch content and therefore do not fall apart when cooked.
I opted for so-called triplets. These are small early potatoes that are usually waxy or predominantly waxy. But also varieties such as Annabelle, Linda or Nicola. Would you like a little more color on your plate? Then try varieties that have a red or purple skin, such as Laura or Violetta.
What is rosemary and where does it come from?
Rosemary is an important spice in Mediterranean cuisine and is mainly used in barbecue recipes. But it is also a popular aromatic addition to sweet dishes such as apple jelly.
You will definitely find it in mom’s garden, more precisely in the herb spiral next to thyme, mint and Co…. but it comes from the coastal regions of the Mediterranean.
Like fir trees, the small shrub has small needles that smell slightly resinous and are reminiscent of the forest. Its aroma is tart and spicy to slightly bitter. For me, it therefore goes fantastically well with meat, fish, root vegetables and pastries.
Which oil is the best?
I almost always use olive oil because the flavor harmonizes so well with the potatoes and rosemary. However, it is important that you use an olive oil with a high smoke point, as the air fryer heats up properly.
You can also use other oils such as coconut oil, soybean oil, avocado oil or grape seed oil. However, coconut has a strong flavor of its own and I don’t necessarily recommend it with rosemary.
Rosemary potatoes from the hot air fryer – how to prepare them
The preparation of this recipe is so simple that those who don’t like cooking will be delighted. It doesn’t even create a big kitchen mess – you only need a board and knife as working materials. You can also leave the apron on and just get started:
- Preheat the air fryer (but this is not a must, you can of course do without it).
- Wash the potatoes well (e.g. with a vegetable brush) and cut in half.
- Sprinkle the potato halves with olive oil and salt.
- Pluck the rosemary needles from the stalks and sprinkle over the potato halves.
- Bake the potatoes in the air fryer for approx. 15 minutes until golden and crispy.
- Serve the air fryer rosemary potatoes while still hot and crispy.
While the potatoes are crisping away in the air fryer, you can prepare a quick dip and then serve with them.
Variations (with other herbs) of the potatoes
Of course you can also prepare the roast potatoes with other herbs and spices, but then they are no longer rosemary potatoes. But it’s not wild and can be just as delicious – let yourself be inspired:
- Ground rosemary (if you don’t like the needles)
- Thyme or lemon thyme
- Oregano
- Herb mixtures such as Italian herbs or herbs from Provence
- Smoked herbs and spices such as paprika powder or salt (go particularly well with meat and fish)
- Garlic cloves (you can also use halved bulbs, which you can then squeeze out later)

How do you make roast potatoes particularly crispy?
Depending on the size of your air fryer, there may not be room for all the potatoes in the basket at once. It’s better to make several portions, because if the basket is too full, the air can’t circulate properly and the potatoes won’t get crispy.
You can also turn them halfway through the baking time or use the shake function if you want to make sure they are crispy on all sides.
Before topping the potatoes with rosemary and placing them in the airfryer, don’t forget the oil. You can also rub them with a little butter to give them more color when roasting.
Do you use baking paper so that the basket doesn’t get too dirty? Then leave a few air holes so that the air can circulate. I always do it without baking paper – it works really well and guarantees that I always clean the basket of the air fryer.
What goes well with rosemary potatoes?
There are so many delicious recipes for side dishes. The choice of meat, fish and vegetable dishes is huge, so here are a few ideas for you:
If you love barbecuing as much as I do, then roast some lamb chops over the hot coals and serve them with a spicy sauce called Zhug and, of course, the aromatic rosemary potato. But barbecue skewers such as shish kebab, shish taouk or halloumi skewers also go perfectly with it.
A quick salad is always a good option and of course I have a few recipes such as cucumber and avocado salad, shirazi salad or the wonderful tomato salad. Or would you just like a dip with it? With labneh, olive tapenade or zucchini cream, you are guaranteed to be well looked after.
How long can the roasted potatoes keep?
You can store leftover potatoes in an airtight container in the fridge for approx. 3-4 days. If you don’t want to eat them cold, you can simply reheat them in the airfryer for a few minutes – but I can no longer guarantee that they will be crispy.

Ingredients
- 500 g Potatoes (mainly waxy)
- 15 ml Olive oil
- 10 g fresh rosemary
- Salt
Zubereitung
- Preheat the air fryer to 190°C.
- Wash the potatoes, pat dry and cut in half lengthways.
- Brush the potato halves with olive oil and sprinkle with salt.
- Pluck the rosemary needles from the stalks and sprinkle over the potato halves.

- Serve the rosemary potatoes from the air fryer with the dip.
